I'm 99% sure there was a thread somewhere around here that had people posting their cooking recipes. But I (and the search function) can't find it anywhere.

So anyway. I thought I'd get the ball rolling by asking if anyone has any good spaghetti sauce recipes. I tend to use storebought jars (Ragu for the win), but when I feel like cooking I usually go with the following:

Quote:
Ground Turkey - 1lb
Onions - 1 large, 1 small/medium; coarsely chopped
Extra Virgin Olive Oil - enough to coat bottom of pan/pot/bowl/whatever
Canned Crushed Tomatoes - Two 28oz cans
Garlic - 3 cloves, finely chopped
Oregano & Basil - palm full of each
Salt & Pepper - to taste

*Saute meat, onions, and garlic for a few minutes (until garlic turns slightly yellow).
*Add everything else and simmer for about 15 minutes.
*Makes about 5 or 6 servings


I thought I'd try something different. Any suggestions? If not, feel free to post any other recipes that you're not keeping secret.

I like adding crushed red pepper flakes in mine once in awhile.

Tanis and I made this really interesting bleu cheese cream sauce for tarragon chicken. It was rich, but good. I don't remember everything we used right now.

This one is one my brudder concoted and its like the lazy man's way to make a great dinner IMO. We call it Chicken Enchilada Casserole, its kinda like a taco lasagna sorta thingy... anyway.

Code:
1 can cream of chicken
1 can cream of celery
½ can chicken broth
½ can chopped green chilies
1 can of white chicken (or can use chicken breasts...but im lazy and just use canned chicken)
6 tortilla shells
1 bag of cheddar cheese


Mix all the cans of stuffs together in a bowl (it’ll look gross but tastes nummy). Put 2 tortilla shells on the bottom of a cake pan, spread some of the mixture onto the tortilla shells then add cheese on top.  Repeat with the shells, mixture and cheese two more times.  Bake at 350 degrees for 30 minutes.

I like to add a dollop of sour cream and some tortilla chips with refried beans on the side.

I'm not going to post my homemade sauce recipe, my family would kick my ass (it has been passed down through multiple generations). But just for the record, Ragu is teh suck. Best pre-made sauce I've found is Bertolli's mushroom and roasted garlic. Still nowhere near homemade quality, but far better than any other jarred stuff. I use it as for one of my 'quick' meals.

I will give you this hint, to cook your pasta al dente, set a timer for 7 minutes (for dry noodles, 5 for fresh) from the time you drop the noodles into the salted pot of boiling water. Stir frequently to avoid sticking and clumping. When the timer buzzes, taste test a noodle. They should be just done. If not, cook for 1 more minute and repeat the taste test. Continue this process until they are exactly right. Drain and place back in pot (or a bowl). Pour 1 tablespoon of olive oil over pasta (to avoid sticking) and stir well. Serve immediately.

Don't undercook (ugh) and overcooking turns them to mush.
